Help A Butcher in Need… Help Saxelby Cheese Support Silva!
When I first opened Saxelby Cheese in the Essex Market, Silva was my first market buddy. He made me, the oddball /newcomer/cheesemonger, feel immediately welcome in this market of diverse vendors, and for that I am eternally grateful! I soon came to know Silva as a bit of an Essex Market legend… He was a longtime butcher at Jeffrey’s Meats and continued on to work at The Heritage Meat Shop when they opened in the market. He knows his way around a dry aged steak, cooks a mean goat curry, and is the consummate gallant, old-school brand of butcher that is emulated by the new-school hipsters who love the trade.
Unfortunately, Silva has been battling cancer for the past few years and can no longer manage his symptoms and continue to work at the Heritage Meat Shop. Together with the good folks at Heritage Foods USA, we’re helping to raise money for Silva to go home to Brazil to live with his daughter.
Emilie and the team at the Heritage Meat Shop are also organizing some fundraising events for Silva in the coming weeks. Please help us spread the word and attend as many as you can!
