raw milk cheese appreciation day

This Saturday, stop by Saxelby Cheesemongers to celebrate the first ever Raw Milk Appreciation Day! We’ll be doling out samples of our favorite raw milk cheeses, and offering a discount of 10% off all raw milk cheese purchases!
Making cheese from raw milk is a tradition that spans thousands of years of human history. It wasn’t until the mid-twentieth century (coinciding with the growth of large-scale, industrial food production) that cheeses began to be made from pasteurized milk. And while pasteurization has its place (in large cheese factories say…) we cheesemongers have a deep love for raw milk cheeses, the traditions they represent, and the flavors they convey.
In addition to being delicious and complex, it turns out that raw milk cheeses are very good for you! Raw milk is a complete food – containing protein, fats, carbohydrates, vitamins, minerals, enzymes, cholesterol, and probiotics. Raw milk also contains all 8 essential amino acids, which are the building blocks for proteins that we can only get from our diet. If that isn’t a health endorsement for raw milk, we don’t know what is!!
Raw milk is rich in minerals and enzymes which are necessary for absorption and utilization of sugars and fats present in milk. Conversely, the pasteurization process renders milk full of minerals that cannot be absorbed, sugars that can’t be digested, and fats that contribute to unhealthy cholesterol in the body. The probiotics (or beneficial bacteria) in raw milk are essential to our health and the health of our guts, keeping harmful bacteria at bay and maintaining a diverse and robust gut microbiota.
Last but not least, raw milk cheeses are safe! Dairies and creameries that produce raw milk cheeses are regularly inspected, and held to the highest standard when it comes to the health and hygiene of their animals.
And did we mention how delicious raw milk cheese is?! Saxelby Cheesemongers is proud to source and sell raw milk cheeses from our network of exceptional local farms. Stop by the shop this Saturday and share a slice of one of the most delicious foods humanity has ever produced!

Grilled Cheese of the Week!
The Sweet & Stinky

Not to brag, but we cheesemongers have really outdone ourselves this week…  The Sweet & Stinky is a next level grilled cheese sandwich. We take liberally sliced Grayson from Meadow Creek Dairy, a dab o’dijon mustard, and a drizzle of local honey, between two sliced of Pain d’Avignon pullman bread slathered with – wait for it – Kewpie mayonnaise and Trickling Springs butter. Eureka! Crispy, divine, melty goodness. Just in time for lunch.

And The Beat Goats On…
Spring has officially sprung at Saxelby Cheese!
Outside the crocuses are popping up all over tarnation, and inside our cheese case, delicate and delicious goat cheeses are stealing the show. Check out a few of our new arrivals this week and crack open a bottle of rosé while you’re at it!
pearl

Pearl – Seal Cove Farm

This delicate little button is made from a mix of goat and cows’ milk, yielding the best of both ruminant worlds. The cheese is fresh, tangy and silky in texture, with just a touch of a musky bite from the goats’ milk. The cows’ milk is there to mellow things out, lending an easy, buttery and yogurty twang. Pearl got its name from the bloom of white, almost pearlescent mold that grows on the surface of the cheese as it ages. Made to order for Saxelby Cheesemongers by Barbara Brooks of Seal Cove Farm, one of Maine’s finest creameries!
sandy creek

Sandy Creek – Goat Lady Dairy

Over the years, their talented cheese makers have created a stellar lineup of goat and cows’ milk cheeses. We’ve just received our first shipment of Sandy Creeks for the season – a 100% goats’ milk confection, light, fluffy and tart with a line of vegetable ash running through the center.
